What is γ-(gamma)-chitin?
Chitin crystals can form in different ways: in α-chitin, the chitin chains are aligned in an anti-parallel way, while they are aligned parallely in β-chitin. A third crystal form, namely γ-chitin, has been found in some beetles and in the stomach lining of squids. In γ-chitin, the chitin chains are aligned alternatively in such a way that (in a unit cell) two chains are parallel and one is anti-parallel. There seems to be no commercial production of γ-chitin, and no applications either.
